Ingredients
    Salad
  • ½ apple (thinly sliced or diced)
  • 2 tablespoon walnuts (chopped)
  • ¼ cup goat cheese (crumbled)
  • 2 tablespoons dried cranberries
  • 2 tablespoons pumpkin seeds
  • 2 cups mixed greens (spinach, arugula, or kale)
  • Optional: ½ cup toasted quinoa or ¼ cup chopped fresh parsley
  • Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons honey
  • ½ teaspoon Dijon mustard
  • Salt & pepper to taste
Instructions

    In a large bowl, combine apples, walnuts, goat cheese, greens, cranberries, pumpkin seeds, and quinoa and parsley, if opting in.

    Whisk together dressing ingredients in a small bowl.

    Drizzle dressing over salad and toss gently to combine.
